Rice Pilaf

Rice Pilaf

Makes: 6 servings

Ingredients:

2 tbsp (30 mL) butter
1 clove garlic, minced
½ cup (125 mL) chopped onion
½ tsp (2 mL) basil
½ tsp (2 mL) oregano
1 cup (250 mL) thinly sliced carrots
1 cup (250 mL) thinly sliced zucchini
3 cups (750 mL) cooked rice
1 cup (250 mL) seeded diced tomato
½ cup (125 mL) Bick’s® Sweet Corn Relish
Salt and pepper to taste

Directions:

1. Saute garlic, onion and herbs in butter in large frying pan. Add carrots and zucchini. Stir-fry until tender-crisp, about 5 minutes. Add remaining ingredients. Heat through.

1. Add soy sauce for some extra flavour.
