Makes: 6 servings
2 tbsp (30 mL) butter1 clove garlic, minced½ cup (125 mL) chopped onion½ tsp (2 mL) basil½ tsp (2 mL) oregano1 cup (250 mL) thinly sliced carrots1 cup (250 mL) thinly sliced zucchini3 cups (750 mL) cooked rice1 cup (250 mL) seeded diced tomato½ cup (125 mL) Bick’s® Sweet Corn Relish Salt and pepper to taste
1. Saute garlic, onion and herbs in butter in large frying pan. Add carrots and zucchini. Stir-fry until tender-crisp, about 5 minutes. Add remaining ingredients. Heat through.
1. Add soy sauce for some extra flavour.
This was easy and good mother and daughter dinner to cook. We loved it.
