A summertime pleaser from the freezer. Feel free to substitute your family’s favourite ice cream flavour in this recipe.
Preparation Time: 35 minutesFreezing Time: 5 hours
Makes: 12 servings
8 cups ((2 L)) mint-chocolate chip ice cream30 chocolate wafer sandwich cookies3 tbsp ((45 mL)) melted butter or margarine1/2 cup ((125 mL)) Smucker’s® Magic Shell (Chocolate)
1. Soften the ice cream in the refrigerator for 30 minutes. Meanwhile, pulse the cookies in a food processor until crushed. (Or, crush the cookies in a re-sealable plastic bag with a rolling pin). Toss the crumbs with the butter. Press into a 9 x 13-inch (3 L) pan. Freeze for 15 minutes. Drop spoonfuls of ice cream over the crumb base. Using the back of a spoon, spread ice cream evenly over the crust. Freeze for at least 5 hours or until firm. Cover tightly and store in the freezer for up to 5 days. Thaw for 10 minutes at room temperature before slicing. Drizzle the Smucker’s® Chocolate Magic Shell decoratively over each ice cream slice to garnish.2.
