Cheesy Bacon and Egg Bake

Cheesy Bacon and Egg Bake

Ideal for brunch, this soufflé-like dish can be prepared the day before and then popped in the oven for an hour before guests arrive.

Makes: about 8 servings

Ingredients:

12 slices of bread, crusts removed and cubed
14 slices of bacon, cooked crisp and diced
1 small red pepper, diced
4 cups (1 L) shredded Cheddar cheese
6 eggs
3 cups (750 mL) milk
½ cup (125 mL) Bick’s® Zesty Onion Relish
¾ tsp (3 mL) salt
2 tsp (10 mL) Worcestershire sauce

Directions:

1. Place half of bread cubes in greased 13” x 9” (3.5L) baking dish. Sprinkle half of bacon, pepper and cheese on top. Repeat layers again. Beat remaining ingredients together thoroughly. Pour evenly over bread mixture. Press down lightly to cover bread mixture with liquid. Cover with plastic wrap and refrigerate overnight or at least 4 hours.
2. Bake, uncovered, at 350°F (180°C) for 45-55 minutes, or until puffed and golden and knife inserted in centre comes out clean. Let stand 10 minutes before serving.
