Bacon and Bleu Cheese Salad with Garlic Croutons

Ingredients:

1/2 cup (125 mL) freshly grated Parmesan
1/2 cup plus 2 tbsp (175 mL) Crisco® Vegetable Oil
1/4 cup (50 mL) fresh lemon juice
2 garlic
1 tsp (5 mL) Worcestershire sauce
For the garlic croutons
2 tbsp (30 mL) butter
1/4 cup (50 mL) Crisco® Vegetable Oil
2 minced garlic
4 French bread slices cut into 3/4 inch (2 cm) cubes
1 chopped large romaine lettuce head
6 bacon slices, cooked and crumbled
1/2 cup (125 mL) crumbled blue cheese

Directions:

For the Dressing:
1. Combine all ingredients in blender or food processor; blend until smooth. Season to taste with salt and pepper.
For the garlic croutons
2. Heat oven to 400ºF (200°C). Melt 2 tablespoons (30 mL) butter with oil and garlic in small saucepan.
3. Place bread cubes on baking sheet.
4. Pour mixture over bread and toss well.
5. Bake until bread cubes are golden brown and crisp, about 10 minutes.
6. Season with salt and pepper. Cool completely.
To assemble
7. Place chopped lettuce, bacon and blue cheese in a large bowl; add dressing to taste and toss well. Garnish with croutons; serve
